基本的には紫蘇漬けの梅干しを潰してペーストにしただけで、混ぜ物等は特にしていません。なので味もどこまでいっても紫蘇梅のそれではあるのですが、梅としては鮮烈な塩味と酸味の中にちゃんと甘みもあって(梅の甘みであって、砂糖や蜂蜜の甘みではありません)、かつ香りも品の良さを感じさせる製品です。練り梅なので調理向けですが、大手のブランドと比べると塩味はかなり強め。20%超なので「昔ながら」の梅干しの塩味を調整してないというタイプです。ここはもう好き嫌い分かれるかなあ……。梅の風味はそのまま残っていますが料理にする場合は塩味調整が必要になるケースはありそうだなと思いました。味自体は非常に良いですし、自分で梅を叩くのに比べて手軽です。塩味の強さを分かった上で買うなら、十分美味しい製品だと感じました。

This plum paste comes in a small pouch with a spout that makes it very easy to dispense and store. The plum has a rathe unique taste. It's salty with that plum flavor that kind of throw you off at first taste but then you start to like it afterward. It goes well with rice to use as a spread on bread. It's a small pouch so it's rather pricey but it's a unique item that is worth giving a try
This plum paste is amazing. I use a lot of Japanese ingredients in my cooking, and this is definitely an ingredient worth having. The paste adds this sweet/sour flavor that is pungent and adds tons of umami to whatever it is added to.The paste is an excellent value for the cost, especially since a little goes a long way.I use it to marinate my chicken, and it adds an amazing depth and flavor to the chicken. I also mix it with soy sauce and a bit of sesame oil, and use it as a topping/dipping sauce as well.
I am so impressed with this SOKYO Umeboshi Plum Paste. It has that authentic, sharp, and salty kick you expect from high-quality Kishu Nanko plums, and the fact that it has no additives makes it even better.I found that this was delicious and surprisingly versatile; it is great with fruit like fresh cucumbers or even sliced apples for a unique savory-sweet snack. It’s a really fun item that we enjoy using to brighten up rice bowls and dressings. If you love traditional Japanese flavors, this puree is a must-have for your pantry!
